MEET THE MEN BEHIND RJ MEXICAN CUISINE Jay Khan Mr. Jay Khan is a true American success story. While attending college in 1982, Jay worked at Texas Tumbleweed in Addison as a dishwasher and kitchen assistant. After gaining experience in all functions of the restaurant, he was promoted to management and for 6 years held the position of General Manager of the highest grossing location in the chain. Having been highly recruited by many restaurant chains, he chose Lone Star Steakhouse to further hone his skills. For more than four years he worked as an Opening GM and was responsible for opening restaurants around the country from ground breaking to opening day. He rose to the level of Regional Manager at Lone Star before accepting a position with Landry’s Corporation. In 1994 Jay became a Regional Manager with Landry’s and was responsible for 21 units from Texas to Colorado to Arizona. Soon after arriving at Landry’s he and Chef RV met and worked closely for nearly 10 years and that chemistry lead to them joining together to make their first venture out of the corporate nest. In September of 2004 Jay and Chef RV opened RJ Mexican Cuisine where they have enjoyed remarkable success. In Jay’s own words, “I am driven by the challenge of opening and successfully managing businesses to profitability.” Chef Ron Von Hattan Chef RV, as he is respectfully referred to, has 30 years of experience in kitchens around the Midwest and Texas. He began as a young man with his family in their restaurant at age 14. After 7 years he set out to learn his craft. His journey led him to a five star continental restaurant called Faust’s in St. Louis, where under the tutelage of renowned Chef Zoltan Popp he received his classical training. Realizing his passion for crafting meals and menus, he left and joined the corporate giant Brinker International, where for two and a half years he cut his teeth on multi-unit kitchen management. In 1994 he joined the team at Landry’s Corporation and met Jay Khan. The two of them teamed up to manage at their peak 21 units for Landry’s from Texas to Colorado to Arizona. In September of 2004 Chef RV and Mr. Khan set out to make their mark on the industry. Opening RJ Mexican Cuisine was the first venture out of the corporate arena for both and continue to enjoy their success from that endeavor today.
